Here are the three statements from the counterfeit on the use of eggs for food which the White Estate would have us study. As you read, be careful how you think. Firstly, this is the smooth reasoning of Satan, not Ellen. Second, God warns us on page 180 of the 1858 Great Controversy, that Satan is constantly putting suggestions into our minds.

And what might these suggestions be? Well, in the particular case at hand, the counterfeit SOP is so designed by Satan to deceive you into thinking that the eating of eggs is ok… for you. Better err on God’s side not Satan’s. Don’t lust for forbidden pleasures of taste. Eternal life is at stake, for you, I have made my decision.

Those who live in new countries or in poverty-stricken districts, where fruits and nuts are scarce, should not be urged to exclude milk and eggs from their dietary. It is true that persons in full flesh and in whom the animal passions are strong need to avoid the use of stimulating foods. Especially in families of children who are given to sensual habits, eggs should not be used. But in the case of persons whose blood-making organs are feeble,–especially if other foods to supply the needed elements cannot be obtained,–milk and eggs should not be wholly discarded. Great care should be taken, however, to obtain milk from healthy cows, and eggs from healthy fowls, that are well fed and well cared for; and the eggs should be so cooked as to be most easily digested. {MH 320.1}
The diet reform should be progressive. As disease in animals increases, the use of milk and eggs will become more and more unsafe. {MH 320.2}

Concerning flesh meat, we should educate the people to let it alone. Its use is contrary to the best development of the physical, mental, and moral powers. And we should bear a clear testimony against the use of tea and coffee. It is also well to discard rich desserts. Milk, eggs, and butter should not be classed with flesh meat. In some cases the use of eggs is beneficial. The time has not come to say that the use of milk and eggs should be wholly discarded. There are poor families whose diet consists largely of bread and milk. They have little fruit and cannot afford to purchase the nut foods. In teaching health reform, as in all other gospel work, we are to meet the people where they are. Until we can teach them how to prepare health reform foods that are palatable, nourishing, and yet inexpensive, we are not at liberty to present the most advanced propositions regarding health reform diet. {7T 134.6}
Let the diet reform be progressive. Let the people be taught how to prepare food without the use of milk or butter. Tell them that the time will soon come when there will be no safety in using eggs, milk, cream, or butter, because disease in animals is increasing in proportion to the increase of wickedness among men. The time is near when, because of the iniquity of the fallen race, the whole animal creation will groan under the diseases that curse our earth. {7T 135.1}

Some of our people, while conscientiously abstaining from eating improper foods, neglect to supply themselves with the elements necessary for the sustenance of the body. Those who take an extreme view of health reform are in danger of preparing tasteless dishes, making them so insipid that they are not satisfying. Food should be prepared in such a way that it will be appetizing as well as nourishing. It should not be robbed of that which the system needs. I use some salt, and always have, because salt, instead of being deleterious, is actually essential for the blood. Vegetables should be made palatable with a little milk or cream, or something equivalent. {9T 161.4}
While warnings have been given regarding the dangers of disease through butter, and the evil of the free use of eggs by small children, yet we should not consider it a violation of principle to use eggs from hens that are well cared for and suitably fed. Eggs contain properties that are remedial agencies in counteracting certain poisons. {9T 162.1}
Some, in abstaining from milk, eggs, and butter, have failed to supply the system with proper nourishment, and as a consequence have become weak and unable to work. Thus health reform is brought into disrepute. The work that we have tried to build up solidly is confused with strange things that God has not required, and the energies of the church are crippled. But God will interfere to prevent the results of these too strenuous ideas. The gospel is to harmonize the sinful race. It is to bring the rich and poor together at the feet of Jesus. {9T 162.2}
The time will come when we may have to discard some of the articles of diet we now use, such as milk and cream and eggs; but it is not necessary to bring upon ourselves perplexity by premature and extreme restrictions. Wait until the circumstances demand it and the Lord prepares the way for it. {9T 162.3}

These three different sources have a wicked harmony between them. First, in claiming that Ellen is the author, second, in catering to the lusts of the people.

The gospel takes a man where he is. This is a very important point. Any journey to any place of any distance must begin where you are, because there is no other beginning. But it is also true that you can not go anywhere without taking a step.

There are far too many who would remain at the beginning, hence they will not be in Heaven because they refuse to travel, to take a step, to grow, to perfect their characters.
