Corn is an interesting grain. Tis that time of year when it is a very cheap food of high quality, especially if you can get real organic. When I think of corn, I usually think of “corn and wine” and oil.

Until I come and take you away to
a land like your own land,
a land of corn and wine,
a land of bread and vineyards,
a land of oil olive and of honey,
that ye may live, and not die: and hearken not unto Hezekiah, when he persuadeth you, saying, The LORD will deliver us. 2 Kings 18:32

An interesting parallelism in this verse. Corn is an important grain. Often corn is taken to mean wheat, or something similar. I like the taste of Mexican tamales, specifically the Masa that makes up the body of the tamales.

So I began doing some research on Masa to learn something of it, how to cook it, &c. I learned something interesting. Corn, as it comes from the plant, is not the best of foods. It needs to go through a process called nixtamalization which can be studied on this Wikipedia page.

It is basically a chemical process of using an alkaline solution, usually limewater, to break down the corn into the better food it can be. But here is what I noticed in my research, the writers almost uniformly approach this subject as something developed by early native peoples.

However, we know this to be false. Being a believer in the Bible and God’s providence in all things, we know that Noah lived 950 years, that’s 350 past the flood. Two points on this. God instructed Noah in the building of the Ark, and I am quite sure he also gave him instruction in how to live after the flood, things about the climate were very different than before the flood. Secondly, Noah was smart. It takes some chemistry to understand what needs to happen to corn to make it into a better food. Two reasons I am sure this information came from God.

Think about it. This knowledge had to have been passed down over the years to the children and this is the source of the various “native” people of various lands all over the world. We have to think constantly in terms of God’s hand in the affairs of man to combat this constant pressure from Satan’s wiles.

This is a core reason for Christian education at home, separate from the world, read Satan here, and it’s teaching that is so destructive to faith.

Next time you pick up an ear of corn… and pause… and someone asks you if something is wrong, tell them, “No, everything is just fine, God is in control.”
